Potato Tartiflette

Originating from the Savoie region of France, Tartiflette is a comforting dish traditionally made with potatoes, cheese, and lardons. It reflects the rustic Alpine cuisine, designed to warm up after a day in the cold mountains. Today, Tartiflette is enjoyed throughout France and beyond, often served in ski resorts and during winter gatherings, celebrating hearty flavors and simple ingredients.

Prepare the ingredients: gather potatoes, ground black pepper, thyme, marjoram, 1 garlic clove, smoked bacon, creme fraiche, and cheese.
Cut the smoked bacon into small pieces.
Peel and chop the potatoes into chunks.
Bring a pot of water to a boil and add the chopped potatoes. Boil for 10-15 minutes until just tender but not falling apart.
Once the potatoes are cooked, rinse them in cold water to stop the cooking process.
In a frying pan, heat some olive oil and sauté the chopped shallots and garlic for 5-6 minutes until soft and translucent.
Mix the spices (thyme, marjoram, and black pepper) into the creme fraiche.
Layer the ingredients in a baking dish: start with a layer of potatoes, then add bacon, followed by a layer of the creme fraiche mixture, and repeat until all ingredients are used, finishing with cheese on top.
Preheat the oven to 400°F (200°C).
Bake the tartiflette in the oven for 20-30 minutes until golden and bubbly.
