4 medium russet potatoes - peeled and chopped into small cubes
4 cups (1L) chicken broth (stock)
2 cups (500 ml) water
1 cup almond milk cream
2-1/2 tbsp tapioca flour/starch
4 oz. (115g) baby spinach or kale - roughly chopped
Sea salt and black pepper - to your taste

Once hot, add bacon and cook until crispy. Remove with a slotted spoon to a plate lined with a paper towel and set aside. Keep the fat in the pot.
