Ingredients

  • 1 lb fresh white fish (such as tilapia or snapper), diced
  • 1 cup fresh lime juice
  • 1/2 cup red onion, finely chopped
  • 1 cup tomatoes, diced
  • 1/2 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 avocado, diced (optional)

Instructions

  1. 1In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is fully submerged in the juice.
  2. 2Cover the bowl with plastic wrap and refrigerate for about 2-4 hours, or until the fish is opaque and 'cooked' by the lime juice.
  3. 3Once the fish is ready, drain some of the lime juice, leaving a little for flavor.
  4. 4Add the chopped red onion, tomatoes, cilantro, jalapeño, salt, and black pepper to the fish. Mix gently to combine.
  5. 5If using, fold in the diced avocado carefully to avoid mashing it.
  6. 6Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
  7. 7Serve immediately with tortilla chips or on its own as a refreshing appetizer.

Instructions

  1. 1In a mixing bowl, combine the diced coconut meat and coconut water.
  2. 2Add the lime juice to the bowl and mix well to combine.
  3. 3Stir in the cherry tomatoes, red onion, cilantro, and jalapeño.
  4. 4Season with salt and black pepper to taste.
  5. 5Let the mixture sit for about 15 minutes to allow the flavors to meld.
  6. 6Serve chilled as a refreshing appetizer or light main dish.
