Start by preheating the oven to 350°F (175°C).
Use a stand mixer to cream together 1/2 cup of softened unsalted butter and 1/2 cup of packed brown sugar for about 1 to 2 minutes.
Add 1/2 cup of unsulfured molasses to the creamed mixture, using a sprayed bowl to help it come out easily.
Incorporate 2 large eggs into the mixture.
Add 1 teaspoon of pure vanilla extract and mix again.
In a separate bowl, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 1 teaspoon of baking soda.
Add 3 teaspoons of ground ginger, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, 1/4 teaspoon of ground cloves, and 1/4 teaspoon of allspice to the dry ingredients.
For the liquid, add 4 tablespoons of buttermilk powder and 1 cup of water to the mixture, mixing slowly to combine everything well.
Mix the batter for about a minute, ensuring not to overmix as it can get tough.
Pour the batter into a lined 8.5 x 4.5 inch cast iron loaf pan.
Bake the gingerbread loaf in the preheated oven for about 50 minutes.
