Potato Skins

4 large russet potatoes
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/4 cup sour cream
1/4 cup green onions, chopped
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Preheat the oven to 400°F (200°C).

Wash and scrub the potatoes thoroughly, then pierce them with a fork several times.

Rub the potatoes with olive oil, salt, and pepper.

Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender.

Remove the potatoes from the oven and let them cool slightly.

Once cool enough to handle, cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato inside.

Place the potato skins on a baking sheet, cut side up, and sprinkle with cheese and crumbled bacon.

Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
