Add sea salt and cracked black pepper to the scored roast.
Drizzle a little bit of olive oil over the roast.
Nestle potatoes and pumpkin into the full gastronome.
Season the potatoes and pumpkin with sea salt, cracked black pepper, and a drizzle of oil.
Place the rib roast on top of the potatoes and pumpkin in the combi oven.
Cook at 220 degrees Celsius (full heat) for 15 minutes to create a crust.
Reduce the heat to 160 degrees Celsius and add 20% steam in the combi oven.
Insert a probe into the center of the roast and cook until it reaches 57 degrees Celsius internal temperature.
Remove the roast and let it rest before carving.
