Soak 1/3 cup of rice in warm water.

Prepare the zucchinis by cutting the stem and end, then scraping the skin.

Scoop out the inside of the zucchinis using a teaspoon or a serrated knife.

Peel and chop 3 tomatoes, then add them to a bowl with the drained rice.

Season with 2 teaspoons dried mint, black pepper, and salt; mix well.

Add tomato paste and pepper paste to the mixture.

If the minced meat is low in fat, drizzle more olive oil; otherwise, keep it light.

Stuff the zucchinis with the meat mixture, leaving space for the rice.

Prepare a sauce in a wide pan with tomato paste, sliced garlic, and sauté for a couple of minutes.

Place the stuffed zucchinis in the pan, adding hot water until halfway up the zucchinis.
