Make a Polish starter with 400 grams of warm water, 400 grams of flour, 14 grams of yeast, and 20 grams of sugar. Mix until gloopy and cover.
Let the Polish sit on the bench overnight.
The next day, combine the Polish with additional flour and water to create a dough.
Mix until the dough forms, then let it rest for 15 minutes.
Cover the dough and let it rise for 1 hour.
Punch down the dough and divide it into 12 equal portions, weighing about 133 grams each.
Shape each portion into a ball and flatten slightly, then place on a baking tray lined with baking paper.
Coat the tops with olive oil and score each piece to create a decorative pattern.
Cover with plastic wrap and a tea towel, and let rise for another 30 minutes.
Preheat the oven to 200°C (392°F).
Bake in the oven for 12 minutes.
