2 lb pork loin

Let the pork loin sit out to come to room temperature for about 1 to 2 hours if it was frozen.

Pat the pork loin dry to remove excess moisture.

Cut the pork loin into four equal pieces.

Season the pork pieces on all sides with the seasoning mixture.

Heat a cast iron Dutch oven until it starts smoking.

Sear two pieces of pork at a time in the Dutch oven for 4 minutes on all sides to lock in juices.

Once all pieces are seared, arrange them in the pan and add 1 cup of water.

Cover and place the Dutch oven in a preheated oven at 300°F for 3.5 to 4 hours.

After 3.5 hours, remove the pork from the oven.

Cut the pork against the grain to make the fibers smaller for tenderness.

Shred the pork with forks and mix it back into its juices in the pan.
