2 lbs pork shoulder
1/4 cup soy sauce
1/4 cup rice wine
1/4 cup sugar
1 onion, chopped
4 cloves garlic, minced
1 inch ginger, sliced
2 cups water
2 star anise
1 cinnamon stick
1 tsp black peppercorns
2 green onions, chopped for garnish

Heat a large pot over medium heat and add the pork shoulder, browning on all sides.

Remove the pork and set aside. In the same pot, add the chopped onion, garlic, and ginger, sautéing until fragrant.

Add the soy sauce, rice wine, and sugar to the pot, stirring to combine.

Return the pork to the pot and add the water, star anise, cinnamon stick, and black peppercorns.

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Let the pork braise for about 2-3 hours, or until tender, turning occasionally.
