Cinnamon Apple Muffins

Peel the apples and cut them into smaller pieces.

In a bowl, combine flour, cinnamon powder, custard sugar, and soft light brown sugar, whisking together and breaking up any lumps.

Make a well in the center of the dry ingredients and add the milk and egg, mixing them together before adding to the dry ingredients.

Add vegetable oil to the mixture and then fold in the chopped apples.

Divide the mixture into a prepared cake tray using an ice cream scoop, making six muffins.

Sprinkle cinnamon sugar on top of the muffins.

Bake in the oven for about 20 to 25 minutes until well risen and slightly golden brown on top.

Check if the muffins are done by gently pushing down on them; they should spring back up. Alternatively, use a toothpick to check for doneness.

Leave the muffins in the tin for about 10 minutes before removing them to cool completely on a cooling rack.
