Trofie al Pesto

400g trofie pasta
200g fresh basil leaves
100g pine nuts
100g grated Parmesan cheese
2 cloves garlic
150ml extra virgin olive oil
to taste salt
to taste pepper

Bring a large pot of salted water to a boil.

Add the trofie pasta to the boiling water and cook according to package instructions until al dente.

While the pasta is cooking, prepare the pesto. In a food processor, combine the basil leaves, pine nuts, garlic, and Parmesan cheese.

With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy.

Season the pesto with salt and pepper to taste.

Once the pasta is cooked, reserve a cup of pasta water and then drain the pasta.

In a large bowl, combine the drained pasta with the pesto, adding reserved pasta water as needed to achieve desired consistency.
