Trofie al Pesto

1 tbsp salt
waxy potatoes
green beans
fresh trophia pasta
prepared pesto
extra grated parmesan or pecorino cheese

Boil a large pot of water and add 1 tbsp of salt.

Peel the waxy potatoes and cut them into small, even cubes.

Wash the green beans and trim off the stem ends.

Add the cubed potatoes to the boiling water and cook for 13 minutes.

After 13 minutes, add the trimmed green beans to the same pot and continue boiling for 2 minutes.

Add the trophia pasta to the pot with the potatoes and green beans and boil for the final 3 minutes or according to package directions.

Carefully drain the pasta and vegetables together once everything is cooked, keeping a couple of tablespoons of the cooking water.

Add the prepared pesto to the drained pasta and vegetables and toss gently to coat everything evenly.

Serve immediately, adding extra grated parmesan or pecorino cheese on top if desired.
