Measure out 1.5 cups of liquid (water or white wine).

Add 2 tablespoons of dry mustard powder, 1 tablespoon of onion powder, 1 tablespoon of garlic powder, 1/4 teaspoon of ground cinnamon, and 1/8 teaspoon of ground turmeric to the mustard seeds.
Pour in 3 tablespoons of white wine vinegar and stir all the ingredients until well combined.
Cover the mixture with plastic wrap and let it sit overnight.
The next morning, stir the mixture to check the consistency.
Transfer the mixture to a blender and blend until well combined.
Pour the blended mixture into a saucepan and cook over medium-low heat, stirring until slightly thickened for about 3-5 minutes.
Strain the mixture through a mesh strainer to achieve a smoother texture, scraping to get as much out as possible.
Transfer the smooth mustard into a jar and seal it tightly.
Refrigerate the mustard and let it sit for five days before tasting.
