Juice the lemons: squeeze the lemons, measure 1½ cups (360ml), strain through a fine-mesh sieve into a pitcher and set aside.

Make simple syrup: in a small-medium sized saucepan combine sugar and 3/4 cup (180ml) of water. Bring to a boil and stir until sugar has dissolved.

Make the lemonade: combine the syrup with lemon juice and allow to cool, then transfer to the fridge until ready to serve. When ready to serve add 3-5 cups of cold water, ice (optional) and lemon slices (optional).
