Grate the carrots finely and set aside.
In a large bowl, mix together the grated carrots, granulated sugar, and brown sugar until well combined.
Add the eggs and vegetable oil to the mixture, stirring until fully incorporated.
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the chopped pecans and coconut flakes.
Chill the mixture in the refrigerator for about 30 minutes to firm up.
Once chilled, scoop out small portions and roll them into balls.
Melt the white chocolate in a microwave or double boiler until smooth.
Dip each carrot cake ball into the melted white chocolate, allowing excess to drip off.
Place the coated balls on a parchment-lined baking sheet.
Sprinkle with additional coconut flakes or chopped pecans if desired.
Refrigerate the carrot cake balls until the chocolate is set, about 15-20 minutes.
