1

Preheat your oven to 425°F (218°C) with the rack centered. Prepare a 9-inch (23cm) round springform pan with 3-inch (7.5cm) sides by greasing it and lining it with parchment paper, ensuring the paper extends 2 inches (5cm) above the pan's top.

2

Place the springform pan on a larger baking sheet to catch any drips.

3

In a large mixing bowl, add the softened cream cheese, grate the lemon zest into the cream cheese. Add sugar.

4

In a stand mixer or with a hand mixer, beat the cream cheese, sugar mixture, until smooth.

5

Add the vanilla extract/ paste. Then add the eggs one at a time, beating well after each addition.

6

Mix in the flour and salt. Finally incorporate the heavy whipping cream.

7

Pour the filling into the prepared pan and smooth the top.

8

Bake for 40-45 minutes or until the top is a deep golden brown and the edges are set, while the center still jiggles slightly.

9

Cool the cheesecake on a wire rack.

10

Serve warm, at room temperature, or chilled.
