Homemade sauces can be healthier and cheaper.

1

Pat the baby back ribs dry and cut each slab in half or into 3 sections if desired.

2

Season generously on all sides with the herby rib rub and refrigerate loosely covered for up to 2 days.

3

Remove from refrigerator while preparing the grill to bring to room temperature.

4

Soak wood chunks in water for at least 30 minutes.

5

Prepare a charcoal grill or heat a gas grill to high.

6

For charcoal, arrange coals on two sides of the grill leaving the center empty, and place a drip pan on the bottom.

7

If using a gas grill, turn off the center burners and turn the others to medium.

8

Nestle drained wood chunks among the hot coals or wrap them in aluminum foil and place under the cooking grate for gas.

9

Put ribs on the grill over the drip pan (not directly over heat) and cover.

10

Cook, turning once, until fork-tender and juices run clear, about 1 1/4 hours.

11

Remove from grill and let rest for 5 minutes before serving.
