Clean the carp and remove the scales and entrails.
Rinse the fish under cold water and pat dry with paper towels.
Cut the carp into fillets or steaks, depending on preference.
Season the fish with salt and pepper on both sides.
Prepare three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
Dredge each piece of fish in flour, shaking off excess.
Dip the floured fish into the beaten eggs, allowing excess to drip off.
Coat the fish in breadcrumbs, pressing gently to adhere.
Heat vegetable oil in a large skillet over medium heat until shimmering.
Carefully place the coated fish in the hot oil, cooking for 4-5 minutes per side until golden brown.
Transfer the fried carp to a paper towel-lined plate to drain excess oil.
Serve the fried carp with lemon wedges and a sprinkle of fresh parsley.
Prepare a side of boiled potatoes or a salad as accompaniment.
