Preheat the air fryer to 400 degrees Fahrenheit for five minutes.

Cut 1.5 pounds of chicken breast into bite-sized pieces and place in a medium bowl.

In a separate bowl, place 1/3 cup of cornstarch and add the chicken to it, tossing to coat fully.

Place the coated chicken in an even layer in the air fryer and spray the top of the chicken with more nonstick spray.

Air fry at 400 degrees Fahrenheit for 6 to 8 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit, removing it 5 to 10 degrees early for carryover cooking.

While the chicken is frying, make the orange sauce by heating 2 tablespoons of sesame oil in a medium saute pan over medium high heat.

Once hot, add garlic and 1 teaspoon of fresh ginger, cooking until fragrant (about 30 seconds).

Turn the heat down to medium low and add 1 cup of fresh squeezed orange juice, 1/4 cup of coconut aminos, 2 tablespoons of rice vinegar, and 1/4 cup of maple syrup; whisk and bring to a boil.

Reduce heat to low and simmer for 3 to 5 minutes until thickened.

Once the chicken is done, carefully transfer it to the sauce and toss well, cooking on medium low for a few more minutes until the sauce thickens enough to coat the chicken.
