1

Roughly cut your clean chicken thighs or breast into cubes.

2

Mix flour, cornstarch, egg, salt, white pepper, chicken powder, water and shaoxing wine in a bowl to create a wet batter with a cake batter-like consistency.

3

Add the cubed chicken to the wet batter and mix thoroughly.

4

Add sesame oil or cooking oil to the wet batter to prevent sticking in the fryer.

5

Deep fry your chicken in hot oil, adding one piece at a time to prevent sticking and overcrowding the fryer.

6

Break apart any chicken sticking together during frying.

7

When the fried chicken starts floating and popping, they are reaching doneness; check one piece for doneness if needed.

8

Remove the fried chicken and set aside.

9

Heat oil in a pan.

10

Add red chili flakes and minced garlic to the heated oil.

11

Add brown sugar and white sugar, then mix.

12

Add orange juice and vinegar, keeping the heat low to prevent evaporation.

13

Add soy sauce and adjust seasonings to your liking.

14

Prepare a slurry with cornstarch and water, then add to the sauce to thicken it as desired.

15

Turn up the heat and add the fried chicken and sesame oil, mixing everything together.
