Start by making the dough in a food processor with 2 cups of flour, brown sugar, a pinch of pink himalayan salt, the yolk of one egg, frozen butter, and cold water.
Wrap the dough in plastic wrap and refrigerate for 30 to 45 minutes.
Boil 1 and 1/2 pieces of plantain until cooked, then mash and allow to cool.
In the food processor, add the mashed plantain, a little salt, cinnamon powder, nutmeg, vanilla extract, butter, and sugar, and blend until smooth.
Remove the plantain mixture from the food processor and allow it to cool in the fridge.
Roll out the chilled dough and cut it into tart shapes using a ring and a shot glass.
Fill the tart shells with the plantain mixture and create a crisscross pattern with leftover dough strips on top.
Cover the tarts with plastic wrap and refrigerate for 30 minutes before baking.
Brush the tarts with egg wash made from egg yolk before baking in the oven.
