Cultural Context
Originating from the coastal town of Recco in Liguria, Focaccia di Recco is a traditional flatbread filled with creamy stracchino cheese. This dish is celebrated for its simplicity and rich flavor, often enjoyed during festive occasions and family gatherings. Today, it has gained popularity beyond Italy, inspiring variations and adaptations in pizzerias and bakeries worldwide.

Mix Manitoba flour, fine salt, and yeast in a bowl.
Add room temperature water and extra virgin olive oil to the flour mixture.
Knead the dough until smooth and elastic, about 10 minutes.
Let the dough rise in a warm place until doubled in size, about 1 hour.
Preheat the oven to 220°C (428°F).
Divide the dough into two equal pieces.
Roll out the first piece into a thin circle on a floured surface.
Spread stracchino cheese evenly over the rolled dough.
Roll out the second piece of dough and cover the cheese.
Seal the edges by pinching them together.
Brush the top with extra virgin olive oil and sprinkle with black pepper.
Bake in the preheated oven until golden brown, about 15-20 minutes.
Remove from the oven and let cool slightly before slicing.
