Season the breadcrumbs, flour, and eggs with salt and pepper.

Add a drop of milk to the egg mixture.
Dredge the chicken breast lightly in flour, then dip it into the egg mixture, and finally coat it with breadcrumbs.
Heat a combination of 3 tablespoons of vegetable oil and 1.5 tablespoons of olive oil in a skillet over medium to medium-high heat.
Cook two chicken cutlets at a time for about 4-5 minutes on each side, depending on thickness.
Drain the cooked chicken cutlets on a paper towel-lined plate.
Serve the chicken cutlets with lemon wedges.
