Akara, originating from West Africa, is a popular street food in Cameroon, often enjoyed as a snack or breakfast item. Made primarily from black-eyed peas, these golden fritters are crispy on the outside and soft on the inside, often spiced with peppers for a kick. In Cameroon, they are commonly served with a spicy sauce or enjoyed on their own, reflecting the country's vibrant culinary culture. Soak black-eyed peas in water overnight.
Drain and rinse the soaked peas.
Blend the peas with onion, bell pepper, scotch bonnet pepper, garlic, and a little water until smooth.
Transfer the mixture to a bowl and stir in salt, black pepper, baking powder, and seasoning cubes.
Add chopped parsley, ginger, and thyme to the mixture and mix well.
Heat cooking oil in a deep fryer or large pot over medium heat until shimmering.
Scoop spoonfuls of the batter and carefully drop them into the hot oil.
Fry the akara until golden brown, about 3-4 minutes per side.
Remove the akara from the oil and drain on paper towels.
Serve hot with a dipping sauce or as a snack.
