Melt the butter in a saucepan with the milk.

In a separate bowl, combine all the dry ingredients together.

Make a well in the middle of the dry ingredients and add in the milk, melted butter, egg, and vanilla.

Separate the salt and yeast to prevent them from reacting.

Knead the mixture together until combined. If using an electric stand mixer, use the dough hook attachment for about 5 minutes until the dough is smooth. Alternatively, knead by hand for about 10 to 15 minutes.

Once the dough is smooth and springy, place it in a greased bowl, cover with cling film, and let it rise in a warm place for 1 hour until doubled in size.

After the dough has risen, knock the air back slightly and roll it out into a rectangular shape.

Melt down additional butter and brush it over the rolled dough.

Scatter sugar and lemon zest over the buttered dough.

Sprinkle currants over the sugar and lemon zest, pressing them down slightly.

Roll the dough from the longest edge tightly, ensuring not to break it.
