In a large mixing bowl, add 2 cups of all-purpose flour.
Add 1.5 cups of monk fruit sweetener to the flour.
Add 1/4 teaspoon of salt to the mixture.
Add 1/4 cup of unsweetened cocoa powder to the bowl.
Add 1 teaspoon of baking soda to the dry ingredients.
Add 2 tablespoons of instant coffee to the dry ingredients and mix everything together.
In a separate bowl, combine 1 cup of hot water with 4 tablespoons of unsalted butter until melted.
Add 2 teaspoons of vanilla extract to the melted butter and water mixture.
Stir to combine the wet ingredients.
Add 1/2 cup of plain nonfat Greek yogurt to the wet mixture.
Crack 2 eggs into the wet ingredients and mix everything together until well combined.
Spray a sheet pan liberally with cooking spray.
Pour the brownie batter into the prepared sheet pan and spread it evenly.
Bake in the preheated oven at 350°F for 20-28 minutes, checking with a toothpick for doneness.
Let the brownies cool in the pan for about 15 minutes after removing them from the oven.
Dust the brownies with powdered monk fruit sweetener before serving, if desired.
Serve with a squirt of fat-free whipped cream, if desired.
