Preheat the oven to 350°F (175°C).
Grease a half sheet pan with a small amount of softened butter, ensuring to cover the sides and corners well.
Melt 3 sticks of unsalted butter and 20 oz of semisweet chocolate together in the microwave at 30-second intervals until smooth.
Let the melted chocolate and butter mixture cool slightly before proceeding.
In a stand mixer bowl, crack 6 large eggs and add 2 and 1/2 cups of granulated sugar, 1 and 1/2 tablespoons of vanilla extract, 1 and 1/2 teaspoons of kosher salt, and 1 tablespoon of espresso powder (optional).
Whip the egg mixture until it is light in color and has increased in volume, about 5 to 7 minutes, until it forms a thick ribbon that slowly melts back into itself.
Add 1/4 cup of vegetable oil to the melted chocolate mixture, then fold the chocolate mixture into the whipped egg mixture gently.
Sift 1 and 1/2 cups of gluten-free all-purpose flour and 1 cup of Dutch process cocoa powder over the bowl to avoid clumps, then fold gently until just combined.
Add semisweet chocolate chips to the batter, adjusting the quantity to your liking, and fold in gently.
Pour the brownie batter into the prepared sheet pan, scraping every last bit from the bowl and spreading it evenly to the edges.
Bake in the preheated oven for about 25 minutes, or until a toothpick inserted comes out with a few moist crumbs.
Let the brownies cool in the pan, then place the entire pan in the fridge to harden for precise slicing before serving.
