Preheat the oven to 350°F (175°C).
Cut 2 ripe avocados in half and remove the seeds.
Scoop the avocado flesh into a food processor.
Add 2 large eggs and 1/2 cup superfine almond flour to the food processor.
Add 1 cup confectioner's erythritol, 1/2 cup unsweetened cocoa powder, 1/2 teaspoon baking soda, a pinch of salt, and 1 teaspoon vanilla extract to the food processor.
Process all ingredients for about 1 minute, scraping down the sides as needed.
In a small bowl, combine 1 tablespoon coconut oil and 1/2 cup no sugar added chocolate chips and microwave for 45 seconds to 1 minute until melted.
Mix the melted chocolate and coconut oil together until a sauce forms.
Add the chocolate sauce to the food processor and process for another 30 seconds to 1 minute.
Transfer the brownie batter to a 9x9 baking tray lined with parchment paper and spread evenly.
Bake for 25 minutes at 350°F (175°C).
Let the brownies cool completely in the tray.
For optional chocolate drizzle, combine 1 teaspoon coconut oil and 1/4 cup no sugar added chocolate chips in a small bowl and microwave for 30 to 45 seconds.
Mix the melted chocolate and drizzle it on top of the cooled brownies.
Cut the brownies into 9 squares and serve.
