Homemade Apple Sauce

Cultural Context

Apple sauce has its roots in early American cooking, where it was made to preserve the harvest and provide a sweet, versatile condiment. Traditionally served with pork or as a side dish, it embodies the spirit of home cooking. Today, apple sauce is enjoyed as a snack, dessert, or ingredient in various recipes, with many families creating their own versions with unique spices and sweeteners.

1

Peel and core the apples, then cut them into quarters.

2

To prevent the apples from turning brown, place them in a bowl with 4 cups of water and 1/4 cup of lemon juice while cutting the rest.

3

In a large pot, combine the apple quarters with just a little bit of water at the bottom to prevent sticking.

4

Bring the pot to a boil over medium heat.

5

Reduce the heat to lightly boiling and cook the apples for 5 to 20 minutes until tender.

6

Remove the pot from heat and let it sit for about 5 minutes to cool slightly.

7

In batches, transfer the apples to a food processor and blend into a puree using a metal blade.

8

Return the apple puree to the stock pot and add 1 1/2 cups of sugar and 2 tbsp of lemon juice.

9

Bring the mixture back to a boil, stirring frequently.

10

Add spices: 1 tsp of ground nutmeg, 1/2 tsp of cinnamon, and 1/2 tsp of ground ginger if making spiced applesauce.

11

Fill jars with the applesauce, using half pint jars for this batch.

12

Process the jars in a hot water bath canner for 20 minutes after it reaches a full rolling boil.

13

After 20 minutes, turn off the heat and carefully remove the lid.

14

Let the jars settle for about 5 to 10 minutes before removing them from the canner.

15

Leave the jars out on the counter for 18 to 24 hours to cool before labeling and storing.
