Cut up the sweet potatoes and place them in a pot.
Cover the sweet potatoes with about an inch of cold water and bring to a boil.
Simmer the sweet potatoes for about 10-15 minutes until tender.
Add a couple of tablespoons of olive oil to a skillet and heat it.
Sauté chopped onions in the skillet until tender and translucent.
Add 1 lb of ground turkey to the skillet and break it up with a spoon or fork as it cooks.
Season the turkey with all-purpose seasoning and let it brown.
Add dried rosemary, thyme, parsley, and paprika to the turkey mixture.
Drain excess liquid from the skillet and add a couple of tablespoons of tomato paste and chicken broth.
Stir the mixture and let it simmer for a few minutes.
Once the sweet potatoes are cooked, add a couple of tablespoons of butter and mash them until smooth.
Add a drop of cinnamon to the mashed sweet potatoes and stir over medium heat to remove excess water.
Taste the turkey mixture to check seasoning and adjust if necessary.
Add frozen peas and corn to the turkey mixture and let it simmer for about 5 minutes.
Preheat the oven to 425°F.
Level out the meat and vegetable mixture in the skillet.
Sprinkle grated Swiss and Gouda cheese over the meat and vegetable mixture.
Top the mixture with the mashed sweet potatoes, smoothing it out and fluffing it with a fork.
Bake in the preheated oven for about 15 minutes until golden brown.
Let the Shepherd's Pie cool for at least 20-30 minutes before serving.
