Place almond meal onto a wide plate and add chopped fresh parsley and grated Parmesan cheese. Mix well until combined.
Cut the chicken breast in half and remove the tenderloin. Flatten the breasts.
Beat an egg on a plate.
Dip and coat the chicken in the beaten egg until thoroughly coated.
Transfer the coated chicken onto the almond crumb mixture and coat all sides, pressing down firmly.
Place the coated chicken on a baking tray ready for frying.
In a saucepan, add butter and cauliflower, then pour over heavy cream. Season with salt and white pepper.
Cook with the lid on over medium heat for about 7-9 minutes or until the cauliflower is tender.
Break down the cooked cauliflower and puree it with a stick blender until smooth. Place it back into the pot to keep warm.
In a pan, add butter and olive oil together over medium heat, then add the crumb-coated chicken.
Cook the chicken for about 2-3 minutes on each side until a nice crust forms.
Place the chicken back onto the tray with fresh baking paper.
Dollop over some tomato puree, lay two slices of ham on top, and add grated cheddar cheese.
Place into the oven at 200 degrees Celsius (400 degrees Fahrenheit) for 4-6 minutes or until the top is golden and the cheese is bubbling.
Serve with the cauliflower mash, garnish with fresh parsley, black pepper, and a drizzle of olive oil.
