Sunday Gravy

Cultural Context

Sunday Gravy, also known as Sugo di Domenica, is a traditional Italian-American dish typically served on Sundays. It is a hearty tomato sauce made with various meats and is often enjoyed with pasta. This dish reflects the Italian-American culinary tradition of slow-cooked sauces that bring families together for a communal meal. Its origins can be traced back to Southern Italy, where similar sauces were made, but it has evolved in the United States to include a variety of meats and flavors.

1

Preheat the oven to a high temperature for searing the meat.

2

Sear a piece of leg of lamb in the pot for a couple of minutes on each side until browned.

3

Remove the leg of lamb and set it aside in a warm oven.

4

Sear pork chops in the pot, ensuring not to overcrowd the pan, for about 2 minutes on each side.

5

Add Italian sausage to the pot and sear for about 1 minute on each side until browned.

6

Add a little oil to the pot after browning the meat.

7

Add 2 chopped onions and 1 piece of celery to the pot and stir to deglaze the pan.

8

Cook the onions until softened, then add 4 cloves of chopped garlic and stir.

9

Add a 12 oz can of tomato paste to the pot and cook it down for about a minute to remove the raw flavor.

10

Pour in red wine until the jar is about halfway full, then stir and let simmer for a couple of minutes.

11

Turn off the heat and add some water to the pot, letting it sit off the heat for a minute.

12

Crush 6 cans of whole tomatoes by hand, removing any stems or seeds, and add them to a large bowl.

13

Pour the crushed tomatoes into the pot with the other ingredients and stir.

14

Return all the browned meat to the pot with the sauce.

15

Bring the mixture up to temperature, then cover the pot and place it in the oven set to 225°F.

16

Let the sauce simmer low and slow overnight, stirring occasionally.
