Preheat the oven to 375°F (190°C).
Prepare a baking sheet by lining it with parchment paper.
In a mixing bowl, crumble the feta cheese and combine it with chopped parsley.
Add an egg to the cheese mixture and mix until well combined.
Season the mixture with black pepper and salt to taste.
Lay out a sheet of phyllo dough on a clean surface and brush it lightly with olive oil.
Place another sheet of phyllo on top and brush it again with olive oil.
Spoon a portion of the cheese mixture along one edge of the phyllo.
Fold the phyllo over the filling to create a roll, sealing the edges.
Place the rolled börek on the prepared baking sheet.
Repeat the process with the remaining phyllo and filling.
Brush the tops of the börek with melted butter or olive oil.
Bake in the preheated oven for 25-30 minutes or until golden brown.
Remove from the oven and let cool slightly before serving.
