Cut acorn squashes in half and scoop out the seeds.

Stabilize the squash halves by trimming the bottom if necessary.

Coat the inside and outside of the squash with olive oil, salt, and pepper.

Roast the squash halves in the oven for 30 minutes, checking for doneness with a fork.

While the squash is roasting, dice 4 cloves of garlic, 1 onion, and 3 stalks of celery.

Heat a skillet with olive oil and brown 1 pound of sausage.

In the same skillet, add the diced onion, celery, and garlic, and cook until softened.

Chop 2 apples (peeling optional) and add to the skillet after the onion, celery, and garlic have cooked for about 3-4 minutes.

After 5 minutes of cooking the apple mixture, return the sausage to the skillet and mix well, cooking for another 4 minutes.
