1 lb sweet Italian sausage
1 cup chicken stock
1 cup Italian seasoned breadcrumbs
1/2 cup pecorino romano cheese, grated
1 teaspoon black pepper

Preheat the oven to 400°F.

Cut the acorn squash in half and scoop out the seeds.

Trim the bottom of the squash if necessary to make it stand upright.

Place the squash cut-side down on a baking sheet and roast for about 40 minutes until fork-tender.

In a skillet, heat a little olive oil and add the sweet Italian sausage, cooking for about 10-15 minutes until crumbly.
