8 ounces cream cheese
sifted powdered sugar
1 cup heavy cream
2 sheets gelatin

Blend dry cookies until very fine.

Pour in melted butter and mix until well incorporated.

Cover an 8.5-inch springform pan with parchment paper.

Drop in the cookie mixture and flatten it out evenly.

Put the cookie base in the fridge.

Mix sifted powdered sugar and cream cheese until well combined with no clumps.

Soak 2 sheets of gelatin in cold water for 5 minutes.

Heat about 1/4 cup of heavy cream in a pot.

Squeeze out the soaked gelatin and add it to the heavy cream, letting it dissolve over low heat.
