Preheat oven to 375°F (190°C).
Sauté onion and garlic in butter until translucent, about 3-4 minutes.
Add ground meat and cook until browned, breaking it apart, about 5-7 minutes.
Stir in diced carrots, celery, and potatoes; cook for another 5 minutes.
Season mixture with thyme, parsley, salt, and pepper; mix well.
Pour in beef broth and simmer for 10 minutes until slightly thickened.
Roll out pie crust and line a pie dish with it.
Fill the crust with the meat mixture, spreading evenly.
Cover with a second layer of pie crust, sealing the edges.
Cut slits in the top crust for steam to escape.
Brush the top with beaten egg for a golden finish.
Bake in preheated oven for 30-35 minutes until crust is golden brown.
Let cool for 10 minutes before slicing and serving.
