Chop the onion and add it to a bowl.
Cut the zucchini in half and hollow it out, saving the inside flesh.
Peel the potatoes, cut them in half, and hollow them out as well.
Add olive oil to a pan and heat it up.
Add chopped onion and garlic to the pan and sauté until fragrant.
Add salt, cumin, and black pepper to the mixture.
Mix in the hollowed-out vegetable flesh and raw rice.
Stuff the hollowed zucchini and potatoes with the mixture.
In another pot, heat olive oil and add chopped tomatoes, onion, and garlic.
Add spices and salt, then stir and cook until fragrant.
Add water and bring to a boil, then add the stuffed vegetables.
Cover and cook for about an hour until the vegetables are tender.
