Mango Coconut Energy Bites

1 cup medjool dates (pitted)
1/2 cup dried mango (chopped)
1/4 cup shredded coconut
1/4 teaspoon cinnamon
1/8 teaspoon ground ginger

In a food processor, combine the pitted dates, rolled oats, shredded coconut, dried mango, almond butter, chia seeds, vanilla extract, and salt.

Pulse the mixture until it is well combined and sticky, scraping down the sides as needed.

Once the mixture is combined, use your hands to form small balls, about 1 inch in diameter.

Place the energy bites on a baking sheet lined with parchment paper.
