Place a pot of water over high heat and bring it to a boil, covering with a lid to speed things up.

Slice 800 g of boneless and skinless chicken breast into thick strips lengthwise, then dice into small to medium-sized pieces.

In a bowl, add the diced chicken, 1 tablespoon of dried Italian herbs, a nice pinch of salt, and 20 cracks of black pepper. Mix to coat evenly and set aside.

For the sauce, add 2 cups of cottage cheese to a blender, followed by 2/3 cup of chicken stock, 1 teaspoon each of onion powder, garlic powder, and smoked paprika, 50 g of Parmesan cheese, and 100 g of drained sundried tomatoes. Blend until smooth.

Once the water is boiling, add 500 g of shell pasta and cook for 3 minutes less than the package instructions. Drain when done.

In a large pot or high-rimmed pan over medium-high heat, add 1 tablespoon of sundried tomato oil and the seasoned chicken. Cook for about 5 to 6 minutes until just cooked through, allowing it to sit for 1-2 minutes to build a crust.

Add the drained pasta and the creamy sauce from the blender to the chicken. Turn the heat down to low and mix well, cooking for about 2 minutes to combine without breaking the pasta.

Add 200 g of washed baby spinach to the mixture and cook for roughly 1 minute until wilted. Adjust seasoning if necessary, adding more cracked black pepper if desired.

Divide the mixture into five 750 ml containers, weighing the total amount to ensure even portions. Garnish with extra Parmesan cheese and cracked black pepper if desired.

Let the containers cool for 15-20 minutes before sealing. Store in the fridge for up to 3 days or freeze for 3 months.
