1/4 cup diced sundried tomatoes (about 4 tomatoes or 40 g)

1/2 tablespoon (8 g) tomato paste
3/4 cup (188 ml) chicken stock
3/4 cup (188 ml) heavy cream
1/4 cup Parmesan cheese
1 tablespoon (14 g) unsalted butter

Round up a high-sided saucepan.

Crank the burner up to medium high heat.

Add 2 tablespoons of olive oil and 2 tablespoons of unsalted butter to the pan and melt the butter down.

Cube 1.5 lbs (680 g) of chicken breasts, season with black pepper and a dash of salt.

Once the oil is hot, drop in the chicken and fry until it reaches an internal temperature of at least 165° F (74° C), about 7-8 minutes.

Add half of a large finely chopped shallot to the pan, along with 1/2 teaspoon of red pepper flakes, 1 teaspoon of dried oregano, 1/2 teaspoon of dried basil, and 1/2 teaspoon of dried thyme. Cook for about 1 minute until the shallots are soft.

Turn off the heat and add 1/4 cup of diced sundried tomatoes and 3 minced cloves of garlic. Stir and cook on medium low for about 1 minute until fragrant.

Turn the heat to low and add 1/2 tablespoon (8 g) of tomato paste. Mix well and cook for 30 seconds.

Pour in 3/4 cup (188 ml) of chicken stock and scrape the sides and bottom of the pan to get all the bits up.

Add 3/4 cup (188 ml) of heavy cream and cook over medium heat for about 2 minutes, stirring frequently until the sauce thickens and leaves trails when stirred.

Turn off the heat and add 1/4 cup of Parmesan cheese, 1 tablespoon (14 g) of unsalted butter, and a dash of balsamic vinegar. Stir until combined.

Return the chicken to the sauce and crank the heat up to low to warm the chicken back up slightly.

Taste the sauce and adjust the seasoning if necessary.

Take garlic toast out of the oven and smother it with the creamy chicken sauce.
