tahini

Take chickpeas out and rinse them.
Add chickpeas to a pot with water.
Add salt and a little bit of baking soda to the pot.
Add a lot of garlic to the pot.
Boil the chickpeas for about 45 minutes.
After boiling, put the chickpeas in a blender.
Add a little more salt to the blender.
Add olive oil to the blender.
Squeeze a little lemon into the blender.
Blend the mixture until smooth.
Transfer the hummus to a plate.
Top the hummus with za'atar and smoked paprika.
Drizzle olive oil over the top.
