Gourmet Egyptian Hummus

In modern times, variations abound, with gourmet versions incorporating unique flavors and toppings, making it a popular choice in restaurants and homes worldwide.
tahini

olive oil

Soak chickpeas in boiling water for 2 hours.
Bring soaked chickpeas to a boil for 45 minutes to 1 hour.
Roast garlic in the oven for 30 to 40 minutes, covered with foil and drizzled with olive oil.
Peel chickpeas by rubbing them together to remove the skins, about 60-70% peeled.
Rinse peeled chickpeas.
Blend tahini, olive oil, roasted garlic, lemon juice, and vinegar until smooth.
Gradually add chickpeas one cup at a time while blending.
Add salt, cumin, and ice to the mixture and blend until creamy.
Transfer hummus to a plate, creating a spiral design with a spoon.
Garnish with olive oil, parsley, whole chickpeas, and sumac.
