Prepare the squid by slicing the wings on the soft side for better presentation and cooking.

Cut the body of the squid into slices and score them the same way.

Finely slice a lemon.

Add a good amount of sfire to the dish.

In a bowl, combine 50 g of corn starch, 50 g of plain flour, and 1 teaspoon of baking powder, and whisk together.

Gradually add 200 ml of cold soda water to the flour mixture, whisking until all lumps disappear to create a tempura batter.

Take various ingredients and dip them into the batter.

Heat 2 L of vegetable oil to about 180°C.

Drain the battered ingredients and drop them into the hot oil for frying.

Zest half a lemon into some mayonnaise, add a squeeze of lemon, and a little salt, then mix to create lemon mayo.

Plate the fried seafood and serve with lemon mayo.
