Hungarian Chicken Paprikash

2 tablespoons olive oil
1 large onion
1 red bell pepper
1 green bell pepper
1 small hot pepper
500 g chicken thighs
2 teaspoons sweet Hungarian paprika
1 teaspoon smoked paprika
1 cup water
1 and 1/2 teaspoons salt
2 more cups water
6 or 7 potatoes
1 teaspoon oil
1 English cucumber
1 clove garlic
1 and 1/2 teaspoons sugar
2 teaspoons vinegar

Heat 2 tablespoons of olive oil in a pan.

Add 1 large chopped onion, 1 red bell pepper, 1 green bell pepper, and 1 small hot pepper to the pan.

Saute the vegetables for 4-5 minutes until they have a nice color.

Add 500 g of chicken thighs, cut into smaller pieces.

Add 2 teaspoons of sweet Hungarian paprika and 1 teaspoon of smoked paprika to the pan.

Pour in 1 cup of water and add 1 and 1/2 teaspoons of salt.

Cover and cook for 10 minutes.

After 10 minutes, add 2 more cups of water to the pan.

While the chicken is cooking, prepare a cucumber salad by slicing 1 English cucumber and adding a little garlic and 1/2 teaspoon of salt.

Add 2 teaspoons of vinegar and 1 and 1/2 teaspoons of sugar to the cucumber salad and mix well.

Taste the cucumber salad and adjust seasoning with salt or vinegar as needed.

Cook 6 or 7 potatoes in salted water until tender, then drain and add 1 teaspoon of oil.

Serve the chicken paprikash with the cooked potatoes and cucumber salad.
