Heat a pan on medium and add 1.5 cups of oil.
Fry each piece of hogfish for about 1-2 minutes on each side until slightly crispy.
Add a little salt to boiling water for the macaroni.
Add elbow macaroni to the boiling salted water and stir to prevent sticking.
Leave the lid slightly ajar to avoid boiling over.
Check the macaroni after about a minute to ensure it doesn't overcook.
Add 2 pounds of cheddar cheese and some Velveeta soft cheese for color.
Prepare the gravy using 2 spoons of the oil from frying the fish, along with onion, bell pepper, celery, thyme, lime, garlic, and red pepper flakes.
Fry the herbs for about 30 seconds until softened.
Add a cup and a half of water to the gravy and mix well to combine flavors.
Check the macaroni to ensure it is soft but not mushy.
Turn down the heat on the macaroni to low and stir to prevent sticking.
Mix in onion, bell pepper, garlic, and a quarter of a stick of salted butter into the macaroni.
Add evaporated milk (about half a tin) and leave some to mix with the eggs.
Add 4 large eggs to the mixture and mix well to combine.
Gradually add the cheese mixture to the macaroni, leaving some cheese for the top.
Add paprika on top of the macaroni before baking.
Grease the baking dish with Pam before adding the macaroni mixture.
Top with the remaining cheese and paprika before baking.
