Heat oil in a pot and sauté the medium onion, garlic cloves, ginger, and spices (curry leaves, rampa, bay leaf, peppercorns, cardamom, cloves, and cinnamon) until fragrant.

Add the rice and sauté briefly before adding water, salt, turmeric powder, and thick coconut milk. Cook until the rice is fluffy.

Prepare the shrimp chili paste by mixing oil, garlic, ginger, dried shrimp, dried chili flakes, salt, sugar, and soy sauce in a separate bowl.

For the eggplant achcharu, combine fried brinjal, shallots, green chili, banana peppers, mustard seeds, ginger, vinegar, red chili powder, turmeric powder, cinnamon powder, salt, and sugar in a bowl.

For the seeni sambal, sauté the onion in oil, add salt, chili flakes, plain chili powder, rampa, curry leaves, and tamarind extract until well combined.
