Add 3 rice cooker cups of rice to the rice cooker.

Add onions, curry leaves, pandan leaves, and 20g of butter to the rice cooker pan.

Cook the ingredients for about 1-2 minutes before adding the rice.

Add rice and 6 cups of water to the rice cooker and cook until done.

For the eggplant curry, deep fry 3 large eggplants and set aside.

In a pan, add 1 tablespoon of oil and cook onions, garlic, ginger, curry leaves, cinnamon, and pandan leaves for 2 minutes.

Add mustard seeds, tamarind, chili powder, turmeric powder, green chilies, dried fish flakes, sugar, vinegar, and salt; cook for another minute.

Add the fried eggplants and cook for 2-3 minutes until flavors absorb.

Add 1/2 cup of thick coconut milk and cook for 5 minutes until dry.

For the dried shrimp mix, dry roast desiccated coconut, red chilies, and dried shrimp separately.

In a food processor, blend roasted coconut, chilies, dried shrimp, onion, garlic, and sugar into a smooth paste.

Add lime juice and salt to taste; set aside.

For the chicken curry, add 1 tablespoon of oil to a pan, then add curry leaves, cinnamon, ginger, garlic, and onions; cook for 2 minutes.

Add chili powder, turmeric, and pepper; then add chicken and cook for 2-3 minutes.

Add enough water to cook the chicken for 15 minutes.

For the meatballs, mix 250g minced beef, 1 egg, lime juice, chilies, turmeric, chili powder, pepper, curry powder, salt, curry leaves, onion, ginger, cloves, cardamom, and bread crumbs in a bowl.

Process the mixture until smooth, then form into balls.

Dip meatballs in a mixture of water, flour, turmeric, and salt, then coat with bread crumbs.
