100 g Fete cheese
150 g light Halloumi cheese
2 green bell peppers
2 cucumber
1 red onion
2 boiled beetroots
2 tbsp. capers
12 bunch of coriander
500 gr baby potatoes
5 tomatoes
5 tbsp. extra virgin oil
3 to 4 tbsp red wine vinegar
Salt
Black pepper
Lemon juice

Boil the potatoes. Add them in the bowl & season them with freshly ground pepper & salt. Squeeze the juice of half a lemon in the bowl with the potatoes.

Finely chop the coriander & add it to the bowl with the potatoes.

Cut the Halloumi cheese in cubes & pan fry them without oil.

Add the rest of the ingredients in the bowl.

For the dressing, squeeze one lemon in a small bowl together with the vinegar, 3 tbsps. of olive oil and salt. Stir well and pour into the salad.
